I want to let my blog readers hear my own compositions... but... are there settings which do not allow others to copy from my blog? I"d like my music to remain only listenable on my blog (unless a person wants to download my cd, which they may). Would MP3 Player or Sound Cloud be right for me?

I don't have an answer to your question but another Volunteer or Staff will provide one. It's my opinion that anything you post on the internet can and probably will be stolen.
http://en.support.wordpress.com/audio/ does not include a download button, and http://en.support.wordpress.com/audio/soundcloud-audio-player/ will only include one if you enable it on SoundCloud.
With that said, anything publicly published online can be downloaded if the listener is determined enough.
In all instances, the user can simply choose "View Source" in their browser, and look through your entire site's source code for the player where they will find the URL of the original audio file included in its code. This is true for all audio players, not just here.
