   I'm just wondering if it's possible / how difficult it is to have a stat that tells us the number of unique visitors to our blog...

   WordPress.com stats do not reveal unique visitors. They do display "page views". http://faq.wordpress.com/2006/02/09/questions-about-stats/
   However, you can get a 3rd party free meter to do this. There are several choices. I use sitemeter. http://faq.wordpress.com/2006/07/28/can-i-have-a-statcounter-on-my-blog/
