Is there a way to set the email followers get to only show part of the post instead of the whole post in their email? We want to see who is actually reading the posts and can't do that if they aren't forced to go to the page.

Yes there is. Go here > Settings Reading and select "summary" for your RSS Feed setting
Syndication feeds show the most recent items
For each article in a feed, show

_Summary
