Hi,
First off, this is obviously just me being thick. However, are there any step by step instructions on how to use plugins. Installing and activating I have no issues with. But when it comes to actually getting them to work (What code to add and where to place it) I'm stumbling. Any help is much appreciated.
I'm new to WP as you can tell.

wordpress.com blogs do not have FTP access or plugins.
wordpress.org software installs do have FTP access and plugins.
I believe you are in the wrong forum but as you didn't post the URL for the blog in question I cannot confirm that. This is the forum for bloggers who have blogs that are free hosted by wordpress.com only. The forum for those who are self hosting wordpress.org software is here http://wordpress.org/support/
If you want a definitive answer then post the URL for the blog in question starting with http:// and we'll let you know which forum is the correct one for your software.
