I keep editing my reading settings to change the number of posts visible on one page, and nothing's happening. I've tried several numbers several times to no avail. I use Benevolence -- could it be a theme-related issue? Any help?

You are publishing all your posts as sticky posts which if you do that with all posts, it will ignore the number of posts setting since it will try to "stick" all posts on the main page. You need to use the bulk edit feature at posts > posts and "unstick" all your posts.
