  Can I automatically put all posts with a specific tag in a custom menu? I would like to put archived posts relating to certain topics under their own menu on my sidebar.

  Yes, you can. Use the Custom Menu widget.

  I created a menu and added a category to it and it shows on the sidebar as that category name and not as the original post title. Which means that all posts with that category that appear under my custom menu will be titled the same?

  No, the Category is always titled the same, and that is what shows in the sidebar. The individual posts will always have their individual titles.
