The basics?

  1. Creating posts and pages is intuititve. Is there any documentation explaining how to group posts onto pages and use of menus?

The blog I need help with is documentedtruth.wordpress.com.

  2. A good place to start is the Support page:

    http://en.support.wordpress.com/

for custom menus, this should help:

    http://en.support.wordpress.com/menus/

As for grouping posts on pages, you can't unless you do it manually. Here's the info about posts and pages:

    http://en.support.wordpress.com/post-vs-page/

  3. You can, however add category, tag, and/or archive page links to a custom menu:
    http://en.support.wordpress.com/menus/#adding-category-pages-to-your-menu

All posts in a category will appear on an automatically updated dynamic "category page" if you add that link to your custom menu. That group of posts would be easily available to your readers.

At this point you have only one category with one post. If you make more posts in that category, readers could see all the posts in that category with this link:

You could use a similar link to group posts by tags:
