Hi,
I love the way that the content of each post on the duet theme is divided into two columns as a newspaper would be, however I am not willing to fork out the money for this as my blog is just beginning.
Are there any other simplistic themes that offer this style? or alternatively, is there a way to edit existing themes to incorporate this style?

None that I'm aware of other than duet, but there are several that will display a featured post.
The thing with the duet multi-column featured post is that no version of IE understands or supports it, so anyone with IE would not see the multi-column layout. Maybe IE10 will support it, but then again Microsoft aways seems to be about 2 years or more behind CSS support.
But you can create two-column content manually. Coding here:
