I recently switched from Twenty Eleven to Nishita, and I've realized that I can't specify between standard posts and galleries anymore. When I click "All Posts" it still says which are galleries and which are standard ones, but I have every Screen Option checked and I still can't find it. Am I missing something?

Not all themes support post types, or all types of post types (formats). See the following link.
Hmmm, there used to be a listing of which themes supported which post formats, but it is no longer in the above link I referenced.
