If I go back and edit an old post what are the steps I need to take to make sure that my email subscribers aren't notified? It seems like some of my posts don't send out an email, and others do.

Pages do not have RSS Feeds; only posts do. http://en.support.wordpress.com/post-vs-page/
Set your site to private here > Settings > Privacy then edit and update the posts and then set it back to public after you are done.
