I am upgrading to wordpress.org for my blogs ASAP, but my question is......do my other authors have to have wordpress.org or can they continue to just use wordpress.com to post to my blog(s)?

No, your wordpress.ORG installation will be completely independent of wordpress.ORG or wordpress.COM.
In your dashboard on the new blog, you will have to add all those users and set their roles again. They will need a username and password, but that will be for your new blog only.
