  My theme uses the characters […] to read more when there is an excerpt. I’d like to change that to “Read More.” Where are those characters specified?

  That’s set in the theme and isn’t usually something that can be changed, though if you link to your site I’ll be glad to take a look. I’m not seeing excerpts on the site linked on your username (buyterrysstuff.wordpress.com).
