I signed up for a wordpress.com blog and have since decided to switch to a wordpress.org blog that is hosted at godaddy. I want to make blog more custom by uploading templates, plugins etc. I have everything set up correctly with go daddy but when I log in to the dashboard it seems to take me to the old wordpress.com dashboard where I don't have all the features available that I keep seeing on tutorial/videos for wordpress.org. I hope that is clear because I am so confused!

You need to log into the NEW blog, not the old one. There is no connection between your new self-hosted blog and wordpress.COM.
When you set up your new wordpress installation, you were given a username and password. You have to log into the new blog at http://mynewblog.com/wp-login.php
Did you mistakenly set up domain forwarding to your wordpress.com blog?
