Issues Changing Email Address
I’m trying to change my primary email address (under personal settings) to ‘(email redacted)’. Every time I try, it says that the email address is already being used. However, I only have one WordPress.com account (timelapsedarkroom) and don’t have the email address listed anywhere else in my WordPress profile – I really don’t know why it’s not letting me change it. Any help?

You have two separate email address settings at WordPress.com.
Blog notifications for the admin (like comment moderation, Likes, new subscriptions, etc) are sent to the email address at Settings -> General in the Dashboard.
Personal notifications (like comments on your post, subscription emails, and upgrade renewals) are sent to the email address at Users -> Personal Settings in the Dashboard.
Try changing it at http://wordpress.com/#!/settings/ first.
If that doesn’t work, try Users -> Personal Settings in your blog’s Dashboard.

Thanks for the help. I tried both of these places actually and still wasn’t able to change it – got the same message in both places (that the email address was already being used). I read the link the you sent too – but since I don’t have any other WordPress.com accounts, I don’t think I’m able to use that tip. Is there something I’m doing wrong from what you can see?
Another issue I’m having is changing the blog name. I do this in Settings – General, but then when I go back to the dashboard, the ‘blog title’ column doesn’t get updated with the title I entered. I must be missing something really basic here?

It worked now. That one’s fine, I was trying to change it for my other 2 blogs under the same account. They’ve updated now, maybe it just took a while to refresh.
I’m still unable to enter my ‘(email redacted)’ email for my main email in User – Personal Settings. Any ideas?

I see that email address associated with another account (VERY similar to the account you used here, but I can’t divulge it). That account has no sites associated with it, however. It sounds like you may have set up the other account to be associated with your sites, but that you then set up the timelapsedarkroom account in duplicate.
You can transfer your blogs from timelapsedarkroom to the other user account, if you have full permissions on that account (you should, if you created it!).
