As that’s the way the Kubrick theme is coded to display. If this is important to you then you have two options. The first is to switch to a theme that depicts bullet points in the style you like. The second is to purchase an annually renewable custom design upgrade and use the required CSS editing to make the change.
Remember that the visual editor is not WYSIWYG. It is just a Rich Text Editor and as such does not pull any styling information (in most cases) from the theme CSS files which means any special formatting in the theme for posts or pages will not be reflected in the editor (such as the >> for unordered lists.
