I would like to map my domain (recently bought from hover.com) to a wordpress.com blog to personalize it. I see you have provided instructions on setting up Google Apps email for that domain - any pointers on how to set it up elsewhere? I would like to avoid using Google Apps. Is there any other way to send/receive emails for mapped domains?

Mapping my domain, email question
Yes it is possible to set up an email somewhere else. I suggest go to your registrar's website and they should have the necessary instructions to setup email servers or how to configure the MX records.
The reason people use Google is because it is free for upto 10 users/accounts. Microsoft has started charging for this type of service via their Microsoft Office 365. We all had to move our websites and email somewhere else. We get 6 more months for free but I decided to migrate anyway. So now my website is on WordPress and email on Google.
Hope this helps.
Yes, was able to set up custom DNS and am able to receive emails elsewhere.
