Static page help

    Under reading – Settings – Static Page – Posts, how do I make it so each time I write a new post I can tell it where to go? For example: If I’m writing a travel blog, I want one post to go under destinations – Asia, while another post to go under Destinations – Europe.
    is this something to do with Category?
    I’ve put my ‘Posts Page’ to be blank in the settings because I don’t want a definite post page, I want to be able to tell each post where to go.
